Crab stuffed flounder with asparagus
1 can crab claw meat
4 flounder filets
20 or so asparagus stalks
½ red bell pepper diced small
½ yellow onion diced small
1 egg
1/8 cup natural breadcrumbs
Paprika, garlic powder, sea salt, pepper
In small bowl mix crab, egg, breadcrumbs, onion, pepper, and ¼ tsp of each seasoning. Lay flounder filets out on flat surface (cutting board works) and place heaping tablespoon of crab mixture on each filet. Roll fish up with stuffing in center. Pack another small scoop crab mix on top of rolled up filet and sprinkle with paprika for color. Repeat for all 4 filets. Bake on cookie sheet at 375 degrees for 15- 20 minutes. Steam asparagus and sprinkle with garlic powder. Serves 4
