"Ok must compliment your food again! Mac & cheese was a big hit. So yummy! Taco night was great too! It was so tasty. I realize that eating 'clean' is so good because you get to really taste the food! You lose sight of that when you're in a funk and are ordering in and going out to dinner and not being conscientious. "

For years I struggled with my weight, how I ate and what I thought I my body should look like. Having a history with eating disorders (Bulimia & Compulsive Overeating), when I met Staci, I thought it would be another attempt of me trying to “get right”. I believed as many times before I would soon fail.
In matter of days I realized this wasn’t the case. Having Staci as a nutrition coach helped change my relationship to food, exercise and ultimately with my body image. Within two months I learned to eat healthy and add exercise into my daily schedule.
As I continue with my transformational journey, I still call Staci from time to time, especially when I need a motivational boost. The best decision I could have made was to seek a coach who would be able to see my wanting to get rid of the weight was bigger than just pounds. Staci always saw the bigger picture.
She was instrumental in having me see that taking care of me was a loving and powerful act. Where, for years I isolated myself from friends and family by working long hours and finding comfort only in food. I now wake up, committed to my health and well being; which opens up the possibility to be present, alive and joyful with those who surround me.
Currently, I am in the middle of my process. I continue to eat well, work on my fitness plans. keeping Staci a phone call away, I know all too well that with time, determination, commitment and lots of love, I am already Successful.

From Chubby Girl to Tri-athlete
when I was a kid healthy cooking was not part of my mother’s repertoire. Coming from a Dominican family I ate white rice, beans, pork, fried plantains and potato salad, spaghetti and meatballs in a can with a cheese sandwich and McDonald's was always my reward for doing well in school or completing my chores. Exercise was never anything I did; I was too heavy to even think about doing sports. My family and friends always called me (la gorda) the fat one.
I have always battled with my weight. I've done every diet program you can imagine I have tried Acupuncture, Weight Watchers, South Beach diet, 2 week juice detox, Lemon diet and Atkins diet. They have all helped me lose the weight but in the long run I have gained it back with a few extra pounds. I never learned what to do, I always followed a program. I wanted my weight lose to be long term.
When I started getting coaching from Staci I learned about hydrogenated oil, labels, vegetables, serving size, organic food, what to eat as a vegetarian, what books to read to educate myself on how to eat. Most importantly, with Staci learned that this was a life changing experience, no short cuts this time around.
When I began to get coaching it wasn’t easy at first, others lost weight while I didn't. I wasn't clear if I wanted to do all the work that it required for me to learn healthy habits. Staci on the other hand was persistent and never gave up on me.
The best part about having a nutrition coach is being able to share with her what I liked and what I didn't like. She knew I didn't enjoy cooking so she showed me how to make foods that were easy to make. I learned a lot from her cooking classes. My weekly coaching calls were what grounded me on what worked and what didn't work for the day. After 6 months of learning and putting things into practice I decided to do a Olympic distance triathlon. With the support of my coach I was able to complete my triathlon in a safe and healthy way. Today I still follow my guidelines on what is healthy and what is not good for me, I have learned to plan my meals ahead of time to make sure I eat healthy.
I have managed to put off 20 pounds and keep it off. Learning to make healthy choices has taught me to be patient. Reaching my ultimate goal of being 150 pounds and a size 8 is number one desire. At times I become very impatient and lose track of what I really want and that’s when I reach out to my coach and she redirects me to what my ultimate goal is. Eating healthy is a life changing experience.
